IOS 15 works for me fine I have no problems with it at all
Since iPhone 8/8 Plus had the A11 chipset, this iOS 15 was only like iOS 13 which is given some of the processor to the slow runs and might be unable to runs on proper way..maybe in the next ios 16 could change the way A11 chipset runs.

Considering, iOS 15 doesn't change much, it's not even clear why it would be slower.
Only guess, if there is some "beta" stuff doing something in the background, for example on macOS beta quite often there is crashlog running in background and eating lots of CPU, the more apps crash, the more it eats.
